Muffins, Muffins, Muffins is the name of an old cookbook that was handed down to me that I still use. Once I learned the trick to good muffins (only stir enough until the ingredients are almost combined, still a bit of loose flour) I loved making muffins. I do like to put a bit more in a muffin tin than the recipe provides for, so I usually triple a recipe and make a double batch, or just use individual muffin cups for the right number I need.

BEST BASIC MUFFIN RECIPE:

  • 2 cups self-rising flour
  • 1/2 cup sugar
  • 1 egg, beaten – or substitute a few tablespoons of pureed fruit and a dash of baking powder
  • 1/4 cup oil
  • 1 cup milk
  • flavouring of choice

Mix all ingredients until just combined, with a bit of loose flour left.  Bake at 350 for 20 minutes.

muffin1While I didn’t love a big silicone muffin tray I got as a gift (I found it too floppy to use without a baking sheet under it, and awkward to get one muffin out of at a time without disturbing the other ones) I do like these Chicago Metallic Baking Essentials Silicone Baking Cups, Set of 12 individual silicone muffin cups. Even though you also have to place them on a cookie sheet, its worth it to be able to use as many or as few as you want.

Surprise Muffins

Sometimes I fill the bottom half of a muffin tin with batter, then put different ingredients in the middle, and surround the ingredient with more batter, so you don’t know until you break into it what is in the middle. Some ingredients I use for this are:

  • jam
  • berries
  • diced fruit
  • chocolate chips
  • a mix of butter, brown sugar and nuts (that mix is delicious on top of plain muffins too, my fav!)
  • nuts
  • raisins
  • granola
  • any combination of the above or whatever you can think of
